I love zucchine, and you can make it in many way, the other night I decided to transform it into a carpaccio and it was successful.
1 large zucchine
handful of parsley
salt, pepper and olive oil to your taste
Using a mandolin slice the zucchine, then cut the leeks on top. In a bowl add lemon juice, salt and lemon and splash it over the zucchine, and add a little olive oil. Let it sit for 10-15 minutes and before serving put the parsley.
Isn't that easy? Voila!
