Smashed red lentil

On a meatless Monday or a chilly day lentils could be the right choice. This little round red legumes are loaded with proteins, iron, potassium, phosphorus and fiber. A delicious concoction!


1 onion

2 medium side carrots

2 cups of lentils 

3 cups of vegetable broth

1 Tbsp tumeric 

1/2 Tbsp of oregano

1 tbsp salt 

1 Tbsp coconut oil

Parsley to garnish


Finely chop the onion and add in a pan with the coconut oil to warm and sear. Cut the carrots into halves and add them into the heavy bottom pot (I use the creuset one). Add the oregano, tumeric and stir until onion is golden. Then add the lentils and cover them with broth and sprinkle with the salt. Mix a little and then let it cook for about 10-12 minute until the lentils soaked in the broth. Finally add the finely cut parley and serve warm with a side of salad.
