Salty Veggietable "Cake"

When in doubt have a salty cake. It's easy and you can filled it up with whatever you want. I made this one filled with greens and few extra goodies.

Ingredients:

1 pastry phyllo dough

2 bunches of spinach

1 cup of sliced mushrooms 

2 Tbsp of farmer's cheese or crumbly goat cheese 

2 Tbsp pinenuts

1 egg

Salt and peper to taste

Turmeric in powder (optional)

Preparation:

Preheat the oven at 350F

Take out from the fridge, if frozen the phyllo dough and let it soften. Then take about 5 sheets and set them on the oven square pan making sure there is extra on falling outside the pan to then close the cake.

Rinse well and cook the spinach and add the cleaned and sliced mushrooms for 5-7 min. Then they are nice and soft rinse them so the spinach don't leak. Add them in a bowl and mix with cheese and pinenuts. In a smaller bowl scramble the egg and then add to the mixture. Salt and paper to taste and if you want here you can add the Turmeric. 

Toss everything on the phyllo dough and close one side at a time and put on the warm oven for 30-40 minutes. When the dough gets golden you know the "cake" is ready. Bring it out and let cool a little before serving. 

This will taste delicious the day off or as a left over. It's filled with goodies and will get you satisfied.
