Orange vegetables are contains various elements and nutrients to protect you from cancer, high cholesterol and blood pressure. Keeps your joints healthy, fight free radicals and alkalinize your body. Don't you want to just gulp on these veggies now? On a meatless monday a good combo of veggies can be the winner.
Half of a medium size butternut squash
1 medium onion
1 cup of cubed carrots
1.3 black pitted olives (not in can)
1 cup of baby tomatoes
1 spoon of roasted sesame seeds
1 spoon of dulse seaweek flakes
Put the entire pumpkin in the over at 350F until tender. It will take about 40-60 min
When it's ready cut put it aside. Cut the onion finely, add some olive oil in the pan and make the onion cook with a pinch of salt. Add the cut carrots and let it cook a little with a cover and a drop of water. When they start to be a little softer add the tomatoes and let it cook until they are loosing some water. Keep tossing and at the end add half of the cubed pumpkin and chopped olives and let it all mix together. Add salt, sesame seeds and dulse at last. Close the top for 5 minutes and it's ready to be served.
