Getting tired of your usual breakfast and want something sweet but that gives you energy and fills you up? This chia oatmeal parfait will do its job and keep you going till your lunch break.
If you make the chia part the night before and in the morning the oats then everything will take only about 10 minutes (faster then your coffee!).
1/4 cup of chia seeds
3/4 cup of cashew or almond milk
1 tbsp of maple syrup
2 tsp of vanilla extract (optional)
1/2 cup of gluten free rolled oats
1 cup of filtered water
2 Tbsp of strawberry jam
coconut flakes for topping
Start with putting the chia seeds in the bowl or tupperware you will eat your breakfast from and add the milk, maple syrup and vanilla extract. Let the seeds start to puff and 10 minutes later go check them and turn them, beware this little seeds expands lots. Chia are a great source of iron, omega, proteins and fibers great superfood for start fueling. If you are making the oats in the morning set the chia part in the fridge till morning.
In a pot cook the oatmeal with the water till the liquid gets soaked from the oats. Add the jam and mix well. When this is done set it on top of the chia slowly and you can sprinkle the coconut flakes for some extra sweetness and taste.
