Miso carrot salad

When you think of salad there are millions of types. This one was a success and so simple which can be a starter salad to serve when you have friends for dinners, or as a side salad with you main dish. It's so simple and all you'll need is a mandolin slicer.

Ingredients: 

1 yellow carrot

3 small radishes 

1/2 avocado

5 cherry tomatoes 

4 slices under oil artichokes

3 Tbsp miso 

1 Tbsp EVOO 

1 tbsp lemon juice

Slice with the mandolin the carrots and radishes. Cut the cherry tomatoes in half and the avocado in squares, add the artichoke. 

In a separate bowl mix the miso, lemon and olive oil and then pour over the salad before serving.
