Homemade granola

The cool weather is here and in the morning we need more energy boosters to fill our breakfast plate so I decided to try making some granola and here is what I made. It is easy, you can use your imagination and add everything you love to it. 


1 cup of shredded coconut

6 dried apricots

1 cup of pumpkin seeds

1/2 cup of sliced almonds

1 tsp of pumpkin spice powder 

Handful of walnut

2 tsp of maple syrup 

3 tsp of raw honey

1/3 cup of raw coconut oil

1 tsp of vanilla extract

pinch of salt


Preheat the oven at 300

Mix all the dry ingredients in a bowl

Pour the coconut oil, honey, vanilla and maple syrup in a pot to warm up, when it's all liquid combine to the dried ingredients and mix together with a wooden spoon or your hands. 

Pour everything in an oven tray covered by a baking sheet. Put everything inside and let it cook for 20-30 minuted until everything is golden. Put it out and let it cool for 15-20 minutes and then you can put it in a air seal jar or ziplock and use it for breakfast or snack.
