Endless summer shrimp zoodle

When summer is about to end all I want to savor is good quality fish to make me feel back home in my summer island house. 

Serves 2


1/2 pound of shrimps

3 zucchini romanesco 

2 Tbsp coconut oil 

Salt to taste

Olive oil to drizzle 

Curley parsley

1/3 finely cut white onion 


Spiralize the zucchini and squeeze the excess water out. 

In a green pan set the coconut oil and onion and make simmer for few minutes. When the onion is golden add the zoodle and cook for other 5-8 minutes till they get soft, add the shrimps and mix everything with parsley and salt till the shrimps are nicely cook. Serve warm right away.
