When you are cleansing your body after holidays, indulging a little too much or traveling, soups are a good way to go, since they nourish your body, cleanse your colon and help to replenish.
5 celery stalks
1 carton Vegetable stock or homemade about 1L
1 Tbsp curcuma
1 tbsp of dulse sea weed
1 tbsp of sesame
1 inch ginger pealed and cut (unless you use it on your homemade broth)
If you make your own broth, make sure it's ready and cooled down.
In a pot add the olive oil and leeks cut in round pieces. Make it sear for 5 minutes, add the celery and salt and let it cook a little more and add the curcuma. If you have some carrots from the broth you made use those too, they give a little sweetness to the soup. When everything has been roasted a little add the broth and salt and cover. Make sure the soup doesn't boil hard, but simmer. Let cook for 30 min until all the veggies are soft. Once everything looks soft turn off the heat and with a food processor amalgamate everything and serve with some dulse, sesame and olive oil.
