Cauliflower risotto

Cauliflower is a great cancer fighting cruciferous vegetable thanks to his sulfur compound. You can use it to cook many different recipes. How about some rice-free risotto? 

Ingredients:

1 medium cauliflower 

2 zucchine 

1 garlic

4 green onions

2 tsp sesame oil

1 cup of finely chopped green collard or kale 

1 tsp ginger 

1 tsp wheat free tamari 

1/2 parsley

Preparation: 

With a blender mince the cauliflower till is fine and grainy. This might take few rounds. 

In a pan put the sesame oil, garlic and green onions and let warm up a little, add the chopped zucchini and add some salt and keep mixing till the zucchini become golden and almost cooked. Lastly add the minced ginger, cauliflower and green leafs of your choice. Mix till it's all golden and add the tamari and parley. Serve warm!
