Black rice noodle salad

Eating clean food avoiding gluten, dairy and processed food makes you feel much better and give you energy thru ought the day. I made this delicious noodle salad the other day and was just what I needed to fuel and get filled up till supper. 


2 rice noodle bunches

3 spring onions stem

1 large carrot 

1/2 cucumber 

1/3 cup of cilantro 

1/2 lemon 

1 Tbsp rice vinegar

1 Tbsp of Bragg's amino sauce 

1 Tbsp of olive oil

Cut the vegetables in long stems and chop the onions in nice round rings. 

In the meanwhile put some water to boil and dump in the noodles when the water is ready. These will take about 3 minutes to cook. 

Mix the liquid ingredients in a small bowl and add anything to your taste. 

Once the noodles are done, put them on the plate, add the vegetables, onion and top it with cilantro. 

Isn't this simple? It will take you a maximum of 10 minuted!
