Babaganoush

Summer is here and is time for rooftop parties and fresh snacks. 

I made Babaganoush today and came out delicious!! 

Ingredients: 

1 eggplant

1/4 tahini

1 Tbs EVOO

1 tsp salt

A bunch of parsley 

3 Tbs lemon

Procedure: 

Pre-heat the oven at 375 degrees

Put the eggplant in the oven for about 30-40 minutes until the skin is soft. You can poke it with a knife to feel it better.

Put all the ingredients in a food processor and add the cooled eggplant and mix everything!

Taste before serving to add salt or anything extra.
