In the morning you can be a sweet tooth or salty one. For me it depends on the day but here is a delicious recipe when you want something sweet but that won't spike up your blood sugars and then make you crush mid day. When you add fruits to sweets you don't have to add anything extra sugar. I promise it will still taste good and satisfy that morning craving.
2 Cups brown rice flower
1 tsp baking soda
1.5 Cup homemade coconut milk
1 cup frozen blueberries (fresh if in season)
1 handful of sliced almonds
Coconut oil for muffin tray
Preheat the oven at 375F.
In a bowl set the flour and baking powder, add eggs and mix and slowly pour the coconut milk to smooth out the mixture.
Peel the apple and cut in squares and take the blueberries out. Add to the mixture with the almonds and make sure all the ingredients are well spread together.
Use the coconut oil to prepare the tray and pour the mixture into the muffin tray. Cook for 40 minutes until they have all risen and brown. When they are ready remove from the oven and let cool before removing them from the tray, or they might fall apart.
