I am not a sweet tooth typically, except few times. I tend to cook savory dishes but then I live with a man who loves sweets, so I decided to make him delicious healthy recipes with no white sugar, gluten and dairy free.
Here is a simple and fast recipe for the apple, blueberry oatmeal pie:
Preparation time: 10 min
Cooking Time: 30-40 min
1 can of blueberries
3/4 organic small apples
1 cup of oatmeal
1 cup of almond meal
1 handful of walnuts
1/5 cup of maple syrup
EVOO to mix everything together
Put the fruit in an oven baking pot.
Peel and cut the apples in half moon shape
Add the blueberries in the middle
In a bowl mix the oatmeal, almond meal, crushed walnuts, maple syrup and EVOO. Once all the ingredients look sticking to each other add the mix on top of the fruit. I don't like my fruit to be fully covered but if you do add a little but more mix. Once is all ready bake is for about 30 minutes at 350 degrees and then other 5 minutes on a low broil.
Finito! Now enjoy it in the morning or with a little bit of coconut ice cream.
