Reused Almond Pulp Cocoa Balls

IMG_6109.jpg

Do you make almond milk? or any nut milk? I do and have tried many recipes to reuse the pulp and not just composting it. I finally made a great recipe. These cocoa balls are great pick me up snack for adults and kids.

Ingredients:

1 cup leftover almond pulp
1 cup shredded unsweetened coconut flakes
2 tbsp coconut oil
1/3 cup almond butter
3 Tbsp hemp seeds
2 Tbsp ground flaxseed
3 Tbsp cacao powder
1 Tbsp vanilla powder
3 Tbsp cacao nibs
6 pitted dates

Mix everything in a food processor until it's all well blent. With your hands roll medium size balls. Eat right away, or set into the fridge to harden. They keep well up to 3-4 days.
